As long as you plan on bottling soon, I don't see an issue, if you leave the wine in the
carboys with more than an inch of head space, it can spoil fast.Make sure that you stabilize
the wine with K-Me...

yes you should be fine to add one of the wines to top up even though you used a different
yeast, they may taste slightly different but what you are essentially doing is
blending.Excellent, I suspected...
