I guess a kolsch yeast might be a good attempt. While I've not tried this I've been told going
into the lower 60's upper 50's gives a much cleaner profile. However, I don't know if it will

It is possible for it to drop another point In secondary but I doubt it will drop to
1.011unless you force it. Honestly, I wouldn't worry about missing the range by 2 points.That's
