  • Friends got me started in early 90's brewed over 100 gallons in each 1st through 4th years. Slowed year 5, and stopped around '98. Got the bug again in October of 2008. Realized how much I missed it!

    1st batch in 10 years was a Milk Stout... one of my favorite styles.

    Introduced a friend to brewing a month later and he did an Anchor Steam Knock off and has been brewing pretty regularly ever since, and is investing in his own equipment soon.

    First partial mash was in Feb of 09, worked well hit my target at pitch, and had my efficiency of mash worked out @ 75% (thanks orfy!) pre-extract addition.

    I'm now doing mostly all-grain batches with a few partials thrown in for the big High Gravity beers. (about every third or 4th batch)... Some partial boils some full boils out side. Just need a 10gal mash tun. I'm outgrowing my 5 gallon.

    I have a 10 gallon brew pot as well and have done BIAB. It can be done but I prefer to stick to
    grain bills that are 10lbs or less. not because of size of pot, but more for working with over
    ten pound...

    I'm not familiar with that hop variety... have you used it before? if not I would start with 1
    oz for 5-7 days. Alpha doesn't matter for dry hopping as its more aroma than anything else.

    3711 yeast is a beast but I have had no trouble with it having a thin mouth feel... late
    addition strisselspalt for sure! I don't brew my saison without it. Very interesting finish.
