The idea of brew in a bag is to make it simpler to make beer. Sparging is for rinsing the
sugars out of the mash but with brew in a bag you can squeeze the bag and get most of the
sugars out that way ...

I think if your gravity holds for a few days, you should be fine to prime. I would would just
prime as instructed or use a priming calculator for your style of beer. 1.020 is fine, no
bottle bomb worr...
