In Tampa I would also recommend checking out Mr. Dunderbach's. Its suppose to be a traditional

Like Bobbin said gravity readings would help a lot, but it sounds like what you think, about
the yeast having crapped out. Which would explain why the carbonation isn't really forming in

that guy, try weighing it out. Ideally an ounce/per gallon ratio is what you want. So 3/4 a cup

Funny enough I've got a kolsch yeast in my fridge right now, so I wouldn't be too against doing
half a batch with that and the other half with wlp013 or so.Currently its a chilling 81 degrees

I don't see why not if you're sanitary with the whole process. But why not make another one

Yea I'd give it more time, at least 12 days or so before you worry about the clarity. But if
you aren't in a hurry and would really prefer a clearer beer give it a month and you should be
good.
