I recirc the wort through a counter flow until I get below 110 using tap water and then
recirculate ice water like the jbaysurfer described. A 20 lb bag works on both 5 and 10 gallon

The heat stick with a temp controller is a good option. I used to do that and it worked great.

If you put a fan in your chamber it will certainly help. With stagnant air you could have very
different temperatures througout your chamber. Get the air moving around and you will see much
