Not at all. I often keg 1 gallon batches in 5 gallon kegs. It does waste some CO2.

I push mine out with CO2. All that's needed is a cheap air horn, rubber stopper and racking

They really don't contribute to kombucha production. You could sell them though as the SCOBY
trade is well established.
