  you add the honey to make sure that the must is indeed well mixed.

  Either you misread your first measurement, or when you took your first measurement the mead was
  not a well mixed mixture.

  Great prices for Teavana on eBay....you have to be patient. I just grabbed two 3oz bags of
  their Pineapple Kona Pop for around $6 shipped. A great drinking tea, and it will be worked
