You can boil a slightly lesser volume and use top up water to get to a 5 gallon batch size. But
yes, at least a 7 gallon pot would be preferred.

Cascade works well with galaxy. So does Willamette, in my one batch experience with galaxy.

If you maintain a consistent grain to water ratio with a larger grain bill, you have to lower
the sparge volume, right? I thought sparge was a pretty big player in efficiency.
