I'm making wine.Sorbate doesn't kill the yeast, it just prevents it from multiplying. It won't
stop it from fermenting to totally dry. The cracking comes in when I rack it after it clears
    up. Putting ...

How do we stop it? I did try to stop it. The way I did it was to just add some potassium
sorbate and stick it in the fridge. The problem with this is sometimes the glass cracks. I'd
    like to avoid this....

I'm sure this is the wrong topic to post this in. I just started my first real mead, but I
noticed I have lots of maple syrup in the fridge. Does it work the same way as honey? If one
    uses maple syrup ...

Yeah, turbo yeast expels a higher percentage of fusal alcohols. It also doesn't like to settle
out, requiring filtering. That's too much work.Anyway, I've recently found that I've been using
    a deficie...

I'm sorry to resurrect this, but I'm so glad to those who wrote it! I just happen to have an RO
filter at home and decided to give it a try. WOW! My solution used to get cloudy in a matter of
    moments,...

Sorry for this, but I just have to because I'm very excited (and a little tipsy)! Okay, I've
only been making my own wine for about six months now, but this is amazing to me.About three
    weeks ago I st...

I gave a good deal of thought to your post and decided to try something a little different.
:)Add 1 oz of raisins to the must. WOW! What a difference!I read somewhere that you can add up
    to 1lbs. per ...

I've been trying to make sugar-wine (pure rocket fuel) to ferment to dry. So far it hasn't
happened. I must have tried 4 batches so far, and to date, no joy. I've been using 3 lbs. sugar
    with 1 tsp nu...

I'll admit, I did not take an OG. I guess I must have felt it wasn't necessary , since the
sugar content of the concentrate should have been a known variable. Maybe Welches grew super
    grapes last year...

I like EC-1118 myself for this. It bubbles up a lot as first but it seems to finish fast with
no bad flavor to my taste.Later: But I don't age my wines. I prefer them fresh, as soon as they
    clear.
