Brewed my Christmas Bier Sunday night. Used starter yeast. Initial OG 1.098. Fermenting quickly
9 hours later. 36 hours later, nothing in airflow. Thought it was stuck. Checked bucket lid.

Just brewed a NB German Alt, extract, supposed to have 1.052 OG. Mine came in at 1.046. What
can I do next time to correct that?
