I read somewhere that very small recipes need adjusting when upscaling, i.e. from 1gal to

I think you should get that beer somewhere cooler. At 74 degrees it is likely to become an
explosive fermentation and leave you with fusel alcohol and off flavors. Put it in a tub of
cold water and us...
