On a bigger beer if I want to rehydrate and pitch two packets of yeast, what would be the
result of using two different yeasts if they were meant for the same style of beer?

I should have been more clear that I have had great batches since these, so I would rule out

I used 5 oz. sugar, the temp was 68..bottles in fridge for weeks....don't remember gravities,
but there were correct at the time..

It was dated July, and it was real clumpy in the container
