    Indeed, I tried another honey bee ale tonight (now three weeks in the bottle). It is definitely
    starting to mellow out. It seems time does heal all.

    Both kits had specialty grains. I steeped both at 165 degrees for 30 min. I had my dial
    thermometer in the pot the whole time. Then I pulled the bag and started my boil.
