i would say use 1/2 killer and 1/2 mild honey. That would be perfect.

tried mine and it was VERY strong in flavor. Stronger then buckwheat. I might let it age a year
or so more but if you use this MIX

salt and vinegar solution. rinse with water. you have to use the salt and vinegar together.
