I would definitely consider a fan to help vent the heat out from the shelving and remove the
top shelf. Maybe add some insulation to the glass door,

I use a dorm size mini fridge mated to a box made with 3 inch polystyrene foam board insulation
and control it with one of wilconrads black box. Works great for ales, not tried lager temps.

You can do that to set the grains instead of using a pitcher to vorlauf, no reason to do it
during mash unless you are adding heat. I would not run it wide open so you don't compact the
grain bed too ...

If you whirlpool well and give enough time for it to settle you don't need the bazooka screen.
