Saw these guys at NHC and they had some decent beer on tap, which was brewed on the machine.

I'd go for the 6/3, and install a dryer/range plug and/or some 120V receptacles on your wall.
You can never have too many receptacles! And then use a dryer/range cord to hook up the panel.
