You could always skip the stabalization process that halts fermentation, back sweeten with an
unfermentable sugar, like lactose or something, and use dextrose when you bottle to produce

Pretty sure you can carb it by using a non-fermentable sugar to sweeten, and regular old
priming sugar to carb,
