- Hooked up with the former proprietors of Emerald Isle BrewWorks, who specialized in cask-conditioned ales. Homebrew set-up features a 15 gal. system with 2- 1 barrel stainless conical fermenters, lab and walk-in cooler. We affectionately refer to our brewshack as "The Library"rnCurrently brewing in my buddies basement which we call "Biscay BrewWorks". 10 gallon system using carboys in climate controlled box for fermentation.

Have never, ever cleaned a carboy. Fill carboy with 3 gal of PBW inverted into a small bucket
of water for a day or 2, flip over to get the bottom for a day or 2..dump, rinse, clean as

If the hops aren't funky and your brew has made it through primary ferm, there really isn't

Most sanitizers take about 2 minutes to properly sanitize glass. The bourbon would probably
take care of any bugs that were left after the jar was clean, but for 2 extra minutes you can
