My kolsch consistently hits 1.002 - 1.004 using s-05, no infection or off-flavors. I plan for
it and enjoy it nice & dry. I think the yeasties just like that recipe for some reason. All of

Also...Pro brewers do it too, they just do it in the same vessel as the primary. They just dump
their yeast out the bottom of the conical after active fermentation completes instead of taking
    the beer...

Visual clarity.Disagree...A good secondary will let the beer mellow and "get happy." Case on
point...RIS. You want that RIS to have a good long (9 months+ secondary for all of the flavors

First, a secondary really isn't necessary as long as you give it a good long (3 weeks+)
primary. That said, there are some real benefits to doing a secondary, at least for me.[*]It
    gives you the chanc...

I do it all the time with a standard LHBS hop sock. Tie it off to the gas tube with a slipknot,
and let it go. I keep the beer reasonably clear by only letting the hops sit in the keg for 3-4
    days pri...

Probably not. You didn't agitate or introduce a large amount of air. It shouldn't be an issue.
A little bit of air in the bucket won't hurt anything, as long as it isn't introduced into the
    bottle pri...

I have a number of bourbon barrel staves. They have dried out over time, but I know the brand
that was aged in them, and am going to soak them for a day or so to re-hydrate (bourbon-ate?)
    in that bran...

I have a large fermentation cabinet powered by a 5K BTU a/c unit. However, I have come into
possession of a 1 bbl stainless conical (1st prize in a brew comp :mug:) and need to be able to
    use it. My c...

It seemed like a good idea at the time...
