    Good, one variable down.From now on I won't squeeze the air out and I'm going to mark my bottle
    so I always get the same headspace.

    In thinking about it, I'm not sure the residual co2 from fermentation really impacts the
    experiment, since all we are looking for is a safe pressure to pasteurize at.All the residual
