    ABOUT ME

  • Brewing since 2010!
  • I am recently retired and I was bored stiff. My son and I have been enjoying a few craft beers and he suggested that maybe I start brewing my own. I did a little research into it and soon found myself at my LHBS. I bought a starter kit and an extract with grains kit and made my first batch. It was a Midwest Supply kit called Octane IPA. When I transfered it to secondary I thought maybe I would get another kit and bought another extract with grains kit from Midwest. This one was their Noble Trappist Ale. Brewed it up, got it in primary. Turns out I did not get a good boil on the Octane IPA and it tasted like dirty socks but thank goodness the Trappist Ale can out unbelievable and I was hooked. In the year since I started brewing I have brewed 55 gallons.
    1. Octane IPA kit from Midwest. Horrible. My fault though. I did not get a roiling boil on my electric stove and it just was terrible.
    2. Noble Trappist Ale from Midwest. Fantastic. Saved a 6 pack and let it age for 7 months and it

Sounds like the beer is still green. Give it another week or preferably two and see how it
tastes. When I taste a beer too early it normally does not taste right, not bad not wrong just
    not right.+1 y...

You can hook it up to a garden hose or faucet and then have a drain hose or you can buy a
submersible pump to pump ice water from another vessel. I live in Minnesota and our tap water
    rarely gets abov...

I brew a clone of Flying Dog's Raging Bitch Belgian IPA and their yeast for this beer is Wyeast
3944 Belgian Wit. It makes a great IPA!

As I said in my earlier post we don't really know what the alcohol content is. You got a really
good conversion from your mash, that is why it fermented to such a low gravity. I think you got
    a low OG...

So there is beta amalase at temps that low (130s)? I kinda thought OPs plan was a good idea.
Maybe that shows what I know. For the future: Say someone else asks the same question. At what
    point is it ...

Based on your numbers your ABV would be 3.4% You probably did not mix your boil and top off
water properly so you ABV is probably much higher but no way to tell without an accurate hydro

If you were thinking you were mashing in the 150 range and you were actually mashing in the 130
range, you will have a lot of beta amylase enzymes which will create a wort with highly
    fermentable suga...

I think it may be normal as of the last few months. If you search on this forum you will find
quite a few slow Midwest Shipping threads. I have always been a big fan of Midwest but I placed
    an order 3...
