  • I drove by a homebrewing store in Bryan, TX back in 1997 and decided to drop in and find out more. I came home with the usual kit and built on it from there. I stopped brewing when I moved to Denver in 2003 and gave away about half of my stuff. Denver is such wonderful place for commercial microbrews that I just didn't bother brewing my own.

Finally I decided it was time and rebuilt my homebrewery. I have the gear for all-grain (Gott cooler with Phil's Phalse Bottom and spin-sparger) but have yet to take that leap.

First batch was a wheat beer (yeah yeah) that I called "Bad Moon Weizen" and it was fairly drinkable, maybe 25 out of 50.

I did a clone of St. Arnold's Amber and St. Arnold's Brown (I live in Houston from 1999 to 2003). They were drinkable, with the brown being the better of the two. I also did a clone of Young's Double Chocolate Stout, my wife's fave stout. It was almost great :-) but I let too many grain husks into the boil and it turned out to have a bit

The extra water certainly is part of the cause. You can do some calcs and see how much though.
Did you see any sludge at the bottom of your boiler? Was your boiloff less than expected? I
    also had a pr...

I had a session in which my boiloff rate was just way wrong (I'm still learning my kettle). I
typically calculate my gravity during the boil to see if it is approaching my target. I grab a

I always use a 1:10 bleach solution for glass because it's super cheap, super effective and
glass can handle it. It also takes off labels on new bottles - just fill your ale pail with
    bleach water and...

To get dissolved CO2 to disassociate from the fluid (i.e. foam) you need a lower head pressure
and a disturbance in the fluid (or time). By raising the head pressure, you eliminate one of

Some dumb observations and questions (flame suit standing by): I've filled growlers with beer
straight off the faucet (usually with some foam-over) with no counterpressure doodads and every

Looks cool! And Raspberry Choc Stout sounds like a great idea and it combines choc and berry,
which are two things SWMBO loves. hmmm... :D I put my faucets on the side of my fridge to keep

I think you guys are onto the problem, but I'll raise another possibility. Did any grain husks
make their way into your boil? I had a great batch of chocolate stout ruined that way because
    boiled husk...
