You don't have to boil to sterilize, something like 178-180 for 5-10 minutes should be fine.

relax, if I had a dollar for every fermentation that went off in 3 hours Id be broke. Give it a
day or two. Anyway bubbling doesn't mean much, I had a fermentation where the seal on my bucket

But if the mash was actually held at 168, it would have denatured the enzymes and stopped the

Good question! Your first step gets the highest growth rate so it would seem if you can 1 step
