The one I have is just like the stc 1000 but it reads in fahrenheit. It has worked perfect for
about 2 years and is working perfectly again after the deep freeze.

This answer may not help much, but may lead you to a better answer. I think it comes down to
fermentability of the extract. It varies, and can be different from what the manufacturer says.

I have gotten the same belgian flavors on the the 2 ipas using us05 and fermentation temps at
64. It has never happened before.
