    About a week later after I added EC1118. No observable fermentation, no change in gravity. I'm
    pronouncing it dead and dumping. :(

    Update: sodium benzoate is used as a preservative. Would that be an issue? I check the gravity
    yesterday. Starting gravity was 1.072. Gravity now reads 1.075. So I don't know what the hell
    is going on...

    The action you are concerned about is produced by the Meta-bisulfite end of that molecule. The
    K (or Na) side is good before you pitch the yeast as both Na and K provide the yeast with
    beneficial mine...

    Cannot think that the corks soaked in K-Meta will spoil the wine but it is better to cork with
