  • In 1995, my college neighbor was cooking up extract brews on his stove. I remember being mystified, but hooked. Ten years later, I took the plunge, letting Charlie Papazian school me through his famous book. After some moves and a hiatus due to a new daughter and limited space, I've been brewing in my garage again. Brewing all grain single infusion mashes with a cooler mash tun, batch sparging. Only ales until I build my ferm chamber. Will be growing hops this year! Rhizomes ordered.

    My two cents is to use a highly flocculent yeast, maybe an English strain like 1968, so it can
    drop and clear quickly. +1 on the low alcohol for a fast ferment.
