What you have is the opportunity to play. Split it up and dilute into gallons, and then try
some of the varieties you can make. Chai mead, apple pie, acerglyn, melomel, etc.

Nothing to worry about. It just means that most of the off gassing is done. If it never bubbled
noticeably then you worry. stopped bubbling after two weeks, you're fine.

For the higher ABV I use EC-1118. If your going for the lower ABV I'd go with 71B
