  • Been brewing since late 2011 with my best friend Fijigus. We brew mostly stouts and IPAs but have started experimenting with sours, English ales and other tasty fermentables like mead. Started brewing extract batches on the stove and graduated to AG after about six months. We've got about 60 batches brewed between the two of us. Most of them have been pretty tasty but a few have been terrible (like the smoke ale amber experiment).

how many bottles do you guys cellar and how often do you taste it? Do you reference against a
fresh (or younger vintage) beer?Cellaring double bastard does make some sense. Also, on Dogfish

Hmm... I would not have considered Arrogant Bastard or Dogfish Head 120 minute as good
candidates for aging/cellaring. Maybe I should try.I'm not sure how the Arrogant Bastard will
    turn out since I ha...

Why on earth woudl you try to age something as hop forward as DogfishHeads 120min IPA? If I pay
+$10 for a 12oz bottle, Im sure as hell going to get the best out of it.Because I've been told
    that it i...

From my experiences the smokiness in the Stone Smoked Porter drops off considerably after about
eight months. It is still a tasty beer but the smoke flavor is somewhat muted. I just had a
    year old bot...

I think the false notion is not that these extremely bitter/hoppy beers are the best in the
world, but that there is that much difference between very good beer and great beer. I think,
