I am using some recycled yeast and have kind of a brown spot in the middle which I haven't seem

If I were designing the beer from the ground up, I'd leave the C-10 out. But if you mash on the

You have echoed what I was thinking. I was considering turning this into sort of a Leffe style
beer by adding some Hersbrucker and Saaz and using some recycled Trappist High Gravity Yeast.

Crystal 60 will be fine. I wouldn't use any extra.I hope you got the Wyeast 1084, you can get
quite a bit of sweetness out of it if you ferment a bit higher in it's range. I like 68.Also,
