    Just one thing with lychee juice... often when you buy em off the shelf in supermarkets, the
    flavor is pumped up with too much essence. That makes the wine taste like sugar alcohol with
    essence. :(So ...

    I am from India, here every store has lychee juice available easily.I just googled it for your

    How long did it take for your white wine to clarify before the first racking? I personally
    found steinberg to be a little slow. My batch was fermenting at 28.Please let me know how
    things turned out.
