    +1 for kal's post. I would find a probe immediately after the HLT not nearly as useful as a
    probe low in the grain bed or below the false bottom.

    You'll get a better bitter flavor with a 60 hop boil instead of the bittering extract. Use
    extract for the sugar content but use hops for your bitter/flavor/aroma profile
