I definitely recommend Bear Republic. Fantastic beer selection, usually 16 taps going mostly
with beer they do not distribute outside the restaurant. Downtown Healdsburg is beautiful too.

I wouldn't use the airlock either. Just cover the top with aluminum foil. Airlocks prevent air
from entering and allowing oxygen to enter the flask is a positive for your starter.

I say get a larger kettle and outdoor burner. You can experiment with all-grain using BIAB.
This is exactly what I did recently and I am not going back to extract!
