    Is your probe reading air, or do you have in something? Never really timed mine, but seems to
    be hours between cycles. I keep my probe in a plastic bottle filled with water.

    Search for the "no chill" method. I've never tried it, but some people say it's great.

    On a union, you don't mess down the npt threads after install. The big "nut" is used to remove
    and install later. It is a machined surface that does the sealing and no thread tape or dope is
    needed.

    You racked to the secondary way too early. Hydrometer readings are the ONLY way to know how
