  • 5-6 gallon batches of meads and fruit wines. I use a freezing method to arrest fermentation after the primary stage is done if I want a quick turn-around.
  • My next will likely be an elderberry mead and/or wine. It's one of our favorites. we use dried elderberries from our local homebrew supply.

    working on a good pumpkin pie mead, well have been trying for years. Made a great one years ago before i started keeping notes and have yet to re-create it.
  • Cranberry mead. Oceanspray cranberry cocktail mixed with 16# of raw wildflower honey from a local supplier. this is one of our favorite recipes. It usually doesn't last long once it's ready to drink.

    steeped my grains AFTER doing the boil.... DOHgot a nasty infection that ruined a plastic

    uhhhh, wow, i truly hope to christ you're good with 8oz of ginger from the boil. If you need
    more than that you might just want to buy some ginger essential oil and dribble it directly on
    your tongue....

    well, powdered ginger would get the flavor in there, but you'll likely cloud your beer

    I routinely hop in the fermenter, but I always do it with fresh hops, never stuff I boiled
    with. I always strain out my boiled hops. You did nothing wrong :)

    been doing canned pumpkin in meads for years. It works beautifully, especially in conjunction
    with pumpkin pie spices. I love the idea of baking it first. I'm going to have to try that
    soon.
