I personally find it much easier to just let it ferment all the way out. Stabilize it, then
backsweeten up to where you want it. Takes a lot of the guess work out of it. Not sure if
you're wanting it ...

Looking forward to hear how it turns out! I've been looking at doing something like this as
well and have yet to try. Just finished a 5 gallon batch of cider I'm going to experiment with.

good to hear. I was a little worried and since I'm still fairly new, I haven't sprung for a
hydrometer yet. Although a friend said I should just wait and save for a refractometer instead.
