I've gotten pretty busy lately and my nut Brown ale extract kit is going on 4 weeks in primary.
I assume it is perfectly fine and maybe even better with the 2 extra weeks. Is this true?

Yeah, the kit came as a present and my next batch is a nut Brown ale that will be bottled in 2
days. I think I'm going to do th 15 min cascade pale ale next.

Seems like putting a 212+ F pot into 32 F water could cause a good bit of shock on the
aluminum/S.S. Is this anything to worry about? Should it be steeped down to 32 F water?

Eight weeks sounds about right for that big of beer. I would probably dry hop a week before
kegging. You can even dry hop in the keg if you want.I love the sig! Too true...
