Yeah, I can definitely see how that would be easier except that I keep my tanks in the keezer

After another day on CO2 it's much better. Not quite where it should be yet but it seems like I
was still under carbonated. I think I'm on the right track now.

Probably a little undercarbed still. Did it cascade at all? Maybe your co2 regulator isn't
accurate enough at less than 5 psi, or maybe it just needed more time. If you leave it on
beergas it will fin...
