I have that same mill. Wonder if I'll get a free upgrade? I had to replace the thumb screws
with some grade 5 bolts. Well I didn't have to, but it made it easier to adjust:)

Now you're just being silly. The weight is not really that big an issue. Empty, a 6.5 gallon
glass carboy is about 15 pounds. With 5.5 gallons of wort it comes in at around 60 pounds.

Yes. I use gravity and my air compressor to get the water out. Don't ever want that to freeze
up in the winter because it will crack it.
