i use he generic version of realemon, I believe it has some benzoate in it, but I use a stir
stick and whip it for a good 3-4 minutes and usually have active fermentation within a day.

I Agree, the lactose was added because if the bitterness. Spartan is right you typically don't
have secondary, but in this instance I needed the bucket, and didn't have enough bottles.
