IBut after watching Brew Dogs, I wonder how anyone ever gets an infected batch. Throwing yeast

Keep it in there until it's tasting up to your standards then rack it accordingly. Maybe look
into picking up a ph meter.

When I add 60oz of puréed frozen berries I lose a degree or two, but then the beer comes back
