Awesome, glad you went ahead with it. Getting to do a Pro-Am is an awesome prize and
experience. Well worth "giving up" a recipe. Wish I could try some!

Temperature control is a game changer for your beer. Do you have space for a fermentation
chamber? I have one in my apartment (but no SO to tell me it doesn't "match" with the rest of
    the furniture, y...

Mosaic can DEFINITELY stand on its own. I recommend going Mosaic only. I haven't personally
tried using it as a bittering hop (i usually use Magnum), but as late additions/dry hop, it is
    fantastic and...

Will see how it goes. Ideally I'm after a level of bonding that if I bump it it's not going to
    fall off, ...

The GE data sheet for their silicone II says the tensile strength once cured is a little over
200 psi. I can guarantee your keezer collar will not fall off and will not come off without
    some serious e...

Thanks for your reply. I am not sure about my water profile. I've been looking around on the
internet and I can't find a report for my area (I live in Europe), so I am unsure how to get

The recipe doesn't look bad to me, what does your water profile look like? My initial thought
is that all of the dark/crystal malt brought your mash pH down too low.

Looks good, almost all of your flavor/aroma comes from late additions/dry hop. So I would say a
30/45 addition is not needed as your ibu's look to be in line for a moderately hoppy beer.
