I'm guessing either low ph or not enough lacto. For my last berliner I made a 2 vial lacto
starter several weeks in advance to give it plenty of time to grow. I actually pitched the
lacto starter first...Posted in thread: 3711 saison with brett? on 06-20-2011 at 09:26 PM
I made a Brett Saison using 3711 and WL Brux with both being pitched in the beginning at the
same time. The finished beer only had mild funkiness, but after a few months of aging in 750s
the funk is no...Posted in thread: Whose Brett and Bacteria do you prefer? on 04-11-2011 at 12:49 PM
I have always used White Labs, simply because they are the most available. I've had good
success with all strains.Posted in thread: Help! My beer is fermenting without my adding of yeast! on 04-07-2011 at 05:58 PM

In this case I had no dry hop. Only the first one had dry hops. Last three had none.Recipes are
quite different. First two had pellets. Second two had leaf. My boil kettle now has a false
bottom, so n...Posted in thread: Hop Character gone after one week!? on 01-17-2011 at 03:06 PM
I could understand some of the hop aroma disappearing, especially from dry-hop, but I'm talking

hops.Literal...Posted in thread: Hop Character gone after one week!? on 01-17-2011 at 01:06 PM
First, I'm really curious what the 'nasty' flavor you're describing is. No matter how many hops
you have, if you've added an infection or have oxygenated your beer, you're going to get a
nasty flavor....
