IMO, drew does have a point. If time and money are scarce, but it is up to the brewer. I like

Fermenting five gallons in a five gallon carboy can be done. Just requires a blow off tube
until fermentation slows. I used to do it before I got more buckets and a sanke.

I would guess that the party tap is not holding the pressure. Force carb with it disconnected.
Reconnect after you drop to dispensing pressure.

I have brewed in my basement multiple times with a co detector and have found higher co levels
in my kitchen when using the stove. Only got up to I think 60 ppm. I still open the door

I went right back to pellets for that reason. Using whole leaf just seemed to clog everything
and add more steps without any benefits.
