I recommend using a scale to measure your quantities. Since a small different in hops weight
could make a big difference in the final taste of your beer.

US-05 is one of the most neutral yeasts out there. Therefore, I don't think the flavor is
coming from the yeast.

Should be, alcool level of your beer + the low pH of a beer generaly isn't a suitable
environnement for most bacterias and molds
