    Hi ColoHox, yes, pitched Saturday evening late so ~65 hours. Hopefully I am being impatient.
    They are at 72 degrees ambient.

    A lot of small scale commercial cider makers ferment in the IBC totes. There is no reason to
    fear them, other than making sure you have a plan in place to move and transfer them when full.
