It is a brand new bung that has never been used and I obviously sanitized it before I pushed it

Is it safe to brew a batch of beer and let your wort sit over night in a clean and sanatized

My recipe calls for 0.5lbs of wheat LME, if I use DME wheat extract instead do I still use
0.5lbs? Also how will switching to DME effect the taste of my beer?
