In addition to what forstmeister said, they can be used to take readings of really hot samples
(like boiling wort) because you only need a few drops to test, and a few drops cools down WAY

Thanks for the replies, it was b4 the i pitched the yeast, the gravity was 1.032 i was gunning
a 1.039 not to happy with that, but today im having a very violent fermentation process,
