    I checked PH and TA several times and yes they are correct.PH needs to be adjusted up 2.88 to
    3.1TA needs to be adjusted increased .4 to .6It is completely opposite of any of anything I
    ever encounter...

    What was your starting gravity?Most new wines are harsh. I don't even taste mine for a least 3
    months after fermentation,I would sweeten it to 1.030-1.040, stabilize and sulfate it and wait.
