If you are doing this BIAB, you want to mash it in the proper range, 148-158. Your strike water
must be warmer than that to get to that temperature but maybe not 168. Use a calculator to make

I'm got a esb in the primary right now it's been in there almost two weeks. But I'm torn to
either leave it in there for another week then bottle it or rack it to the secondary for a week
n then bottl...
